If there's one thing that's better than making, eating and sharing desserts it would be making, eating and sharing desserts that are ridiculously easy.
These little fudge bites were a huge hit in my home and came in handy when I only had half an hour to whip something up for the next day's afternoon tea. They are best stored in the fridge or freezer(if there's any left!).
This recipe is adapted from Jenny Mustard and Wholefood Simply.
Jenny Mustard has recently joined my list of favourite bloggers. I'm drawn to the beauty in the simplicity of her minimalistic posts and the clean photography by herself and Her David. Their YouTube videos are a little addictive too (see Jenny's fudge video below).
Makes 30 small squares
Ingredients
- 1 cup macadamia nuts, whole
- 1 cup of dates (pitted)
- 1 tablespoon vanilla extract
Recipe
1. Place all ingredients into your food processor and blend until combined (don't worry, this can take a while).
2. Spoon mixture into a tin lined with baking paper and smooth into the shape of a square or rectangle with a knife.
3. Place in the freezer to set for a few hours (I left mine overnight).
4. Take out and cut into desired sizes and shapes. I cut mine into small squares with a super sharp knife to get clean lines. This made 30 little fudge squares.
