Recipe: A Berry Chocolate Smoothie Bowl
Undeniably one of the most Instagrammable foods around, smoothie bowls not only look pretty but taste pretty damn good too. They're perfect for breakfast or dessert but I could honestly eat them any time of day. The concept of a smoothie bowl was new to my Mum, this is how our phone call went when she asked the standard Mum Question of "Are you eating?", "What did you eat today?":
Mum: What did you eat today?
Me: I made a really yummy smoothie bowl this morning with fruit and cacao nibs and these new Buckinis that I got on Saturday.
Mum: How do you make a smoothie bowl?
Me: You just make a thick smoothie then pour it into a bowl and add toppings.
Mum: But what makes it a smoothie bowl?
Me: Because it's a smoothie..in a bowl..
Mum: Oh okay, that sounds nice :)
Buckinis are new to me. I'd seen Loving Earth's new Buckini Cereal mixes on Instagram and eaten buckwheat in my Mum's homemade paleo bread, but was still yet to make them a staple in my pantry. Until now. After discovering Kiss the Berry in Brisbane, Queensland last week I was compelled to add buckinis to my go-to acai smoothie bowl recipe. My housemate BB and I had also just raided ALDI of most of their blueberry punnets since they were on sale (only $2.99!) so I was pretty excited to try some new toppings on my post-Bikram smoothie over the weekend. It was heaven!
What are your favourite smoothie toppings? Have you tried Buckinis?
Serving: 1 large bowl
Ingredients
Smoothie-
- 1x 100g Frozen Acai smoothie pack
- 1/2 banana
- 1/2 cup mango (I used frozen mango)
- 1 cup of chocolate flavoured almond milk
- 1 teaspoon psyllium husks
Optional: Add 1 teaspoon of raw cacao powder to the mix if you love your chocolate!
Toppings
- 1/4 cup chocolate buckinis (Loving Earth's chocolate buckinis are gluten-free and vegan)
- 1/2 banana, sliced
- 2 strawberries, sliced
- 1 handful blueberries
- 1 pinch cacao nibs
Steps
1. Place all smoothie ingredients in a blender and mix until smooth.
2. Pour smoothie into a bowl. Pour a layer of chocolate buckinis then add the rest of your toppings as creatively as you like (this is the fun part).
Enjoy! (after you've taken a photo for Instagram, of course)

Hehe there are buckinis again! I really thought that they were related to bikinis ;)
