Recipe: Acai Smoothie Bowl


Over the last few months my Instagram has shown my growing obsession with smoothie bowls. From my go-to smoothie bowl to this naughty berry chocolate smoothie bowl and even green coloured smoothie bowls. It's almost hard to believe something so pretty and delicious can be so good for you. 

Acai based bowls would have to be my favourite and I've adapted my go-to recipe to become healthier and, in my opinion, just as delicious.

Serving: 1 large bowl

Ingredients

Smoothie
- 1x 100g Amazon Acai frozen smoothie pack
- 1 banana
- 2 large strawberries
- 1 handful of blueberries
- 2 teaspoons psyllium husks
- 1/2 cup of So Good Coconut and Almond milk

Toppings
- 1/3 cup granola (my housemate BB made this one with buckinis, dates, LSA etc.)
- 3 strawberries, sliced
- 1 small handful of 
blueberries
- 1 pinch cacao nibs
- 1 pinch shredded coconut

Steps
1. Place all smoothie ingredients in a blender and mix until smooth. 
2. Pour smoothie into your bowl then get as creative as you like with your toppings. For this one I topped half of the smoothie with homemade granola (thanks BB!), then layered the strawberries, blueberries, coconut and cacao nibs over the other half.

  1. This sounds really good ... I love the idea of adding cacao nibs, it must add a nice kind of depth to the flavour?

    This looks and sound really delicious! I have been looking for simple and tasty Vegan recipes as I am not the most imaginative or successful chef:)
